quick egg breakfast

Ingredients:
2 eggs
2 tsp of shreded cheese of choice
1 tbsp of salsa (note can sub chopped peppers/onions)
1 tsp milk
salt and pepper to own taste

mix ingredients
spray or oil microwave safe cup
put mixed ingredients in cup
microwave for 45 seconds take out and stir, place back in microwave and heat another 1 minute, check for your desired doneness (if not done stir and heat again) and either pour in plate or eat in cup.

I have also added a few mushrooms and that was good.

I don't like runny eggs so I stir and heat another 45 seconds for 2 eggs and that makes it my doneness. I have also used only 1 egg and that is a better size for me for breakfast, lunch or yep even dinner. It is quicker than getting the skillet out and then the clean up cooking that way. This way you have a fork and cup!

Everytime I've tried to do eggs in the micro they've turned out yucky...rubbery and tasteless, but I'll try it your way and give a report. Tomorrow. Late for the gym today, so wolfed down a bowl of Go Lean cereal.

I've used that recipe before and when I had the eggs cooked, I put them
between two pieces of toast and called it a sandwich :lol: seriously,
sometimes I just used bread and loaded it with mayonaise too. I LOVE
egg sandwiches. Never had a problem cooking eggs in the micro.
