Angels on Horseback

Angels on Horseback

Postby VickieP » Fri Jan 15, 2010 9:50 pm

First let me say I don't eat oysters, but I cook them for Ronnie, he LOVES them. Tonight I cooked regular fried oysters and Angels on Horseback or Bacon wrapped oysters. I thought since Mitch hadn't heard of them, some of you might not have either, I know Acadianmom and Marlset have, lol.

First pic is of a gallon of raw oysters. One of Ronnie's friends does that for a living. We got a sack and had him shuck them for us. The remaining oysters will be packaged in dozen to a bag and frozen. Don't yall all wish you lived on the gulf coast! :D

I wrapped them in bacon and skewered them with toothpicks.

Then I seasoned some flour with Tony Chachere's. I sometimes use a cornmeal/flour mix.
Dredge the oysters in the flour, making sure to coat everywhere.

Image

I heated the oil in my deep fryer to 375 and cooked them 5 at a time, so not to cool the oil, for 3 minutes.

Drain on a paper towel, don't cover them if you want them to stay crispy.

Ronnie's plate, yes he ate them all. Sometimes he has me make a ketchup dip, but didn't want any tonight.

Yum Yum Yummmy - love the play by play of how to make them too (with photos no less) My hubby hates oysters, so it would be wasted effort :( I LOVE fried clams...a Maine thing I think :)

No throwing of oysters now.... ;)

It's a good thing I didn't see this last night, I would have been looking for your house. lol

What was the name of the old motel that was just off I-10 between West Lake and Sulphur. Maybe Chateau Charles. Anyway, they served these but were dipped in a batter. I feel my arteries clogging just thinking about them. I use to make them but haven't in a long time. They had the best little sweet rolls. I have seen business men fight over them. Anytime we were going West we would try to arrange it so we could eat there.

When I got out of college I worked for the CPA firm that did the books for this Motel. If we had to work on April 15 they would bring us platters of appetizers and pitchers of Bloody Marys. I can't remember the owner's name but he was nice to us.

Oh my... I just showed mom your post and she's sitting there whimpering! I told her we shoulda stayed longer, lol. She's still goin on n on, "deep fried oysters, omg," *whimper, waaahhh waaahhh.* She said she'd almost classify it as being mean for posting this, especially now that she's all the way out here!! She could probably out eat Ronnie!. Says she can't remember the last time she had deep fried oysters. I'm gonna hear about it for a while!

Martha, you're right, it was the Chateau Charles, they had a wonderful restaurant and lounge there, but it's tore down now.

Kelly & Echo, we were supposed to get them the last day that yall were here, but he ended up getting them the next day, LOL.

Don't think he gets this everyday, LOL, sometimes he gets fried egg sandwiches!

Not an oyster fan, either. The raw ones make my gag reflexes kick in, but have to say the finished product looks tasty. Who can resist food wrapped in bacon and fried!?!

Damn the rotten luck and bad timing! Maybe next time, huh? I prefer fried clams tho, lol.

I love fried egg sandwiches! Mayo, a bit of mustard and toast the bread, yum!!

Angels on Horseback??? HUH????????

I don't see any angels, and no horses here! Try as I may to visualize either angels or horses from the wonderful pictures and instructions, I am coming up with ZIPPO!

I, too, love fried clams, New England style with whole bodies, but oysters leave me totally cold.

Perhaps this recipe means that those who eat them arrive at heaven's doors on horseback, after their hearts stop????

As you can readily see, I do not usually ever post on this recipe thread, as I HATE cooking of all kinds, other than outside steak and burgers! But the title of this recipe caught my eye when I was going to opt for 'mark all read' I must say that the recipe was very professionally presented with wonderful pics and all. But ACK! I do, however, love shrimp wrapped and cooked in bacon with cheese----my daughter does that.

Happy travels!

As do most people who eat Vickie's cooking.

PS: Vickie and I are both huge fans of your "ACK" term!

Soos, these have been called this for many years and I'm not sure why either. According to Wikipedia the dish goes back many, many years. http://en.wikipedia.org/wiki/Angels_on_horseback

Dang Vickie...they look delicious. Is the catsup dip you make like cocktail sauce with horseradish? I love oysters except when someone tries to put them in scalloped corn or stuffing. It isn't Christmas Eve at our house unless there is a big crockpot of oyster stew.
My mind works like lightning...one brilliant flash and it's gone.
