Since entering this world of Widderhood, I have been on the Quest for the Perfect Fried Egg for One.

George always had 3 eggs at a time (Wednesday (soft boiled), Saturday (fried), Sunday (scrambled)) and I had the perfect non-stick skillet, with lid, to accommodate the 3 for frying. Eggs fit perfectly, no burned edges on the whites, soft, runny yolk. Ah, fried egg heaven...

Well, I don't do 3 eggs. I do 2 (or 1). I have been searching for the perfect LITTLE non-stick fry pan for 2 eggs, with cover. There's the One-Egg Wonder - okay size - NO lid (which is necessary for my definition of the perfect egg). I bought it. Tried a saucer over the top. Cumbersome to remove. If anyone going to AK wants it, I'll bring it along for you - used once.

Then, I stumbled upon this perfect little pan...only bad thing is the lid is not glass. Other than that, I have fallen in love with a skillet. My needs are so much simpler these past couple of months. Sad, isn't it - getting excited about a skillet and a mosquito headnet...sigh.

Neat looking little skillet, Mitch. Hadn't thought of need for lid to fry egg but thanks to you, I will try that next time.

Add a few drops of water and the yolk will steam.

Eggs should be room temp (don't have to cook so long, which makes them tough) - break them into a small dish and slip them into the preheated pan all at once. Add water. Cover immediately.

ON EDIT: hints courtesy of Alton Brown, except for the water - that was my Mom's.

I want to invision you in the mosquito net, frying an egg in your fry pan on a grill outside your rig. Of course you would be dancing keeping them skeeters off your legs and backside...WHAT A VISION!!!!

You know that if my photographer hadn't died, you would have your picture.
But the scene I envision would be too difficult using a tripod! :roll:
