Angel Food Pineapple-Orange Cake

Angel Food Pineapple-Orange Cake

Postby Bethers » Tue Jul 22, 2008 7:00 pm

1 Box Angel Food Cake Mix
1 Can Crushed Pineapple - Do not drain
1 small can Mandarin Oranges - Drained

Put box of Angel Food Cake Mix (right out of the box) into an ungreased 9x13 pan. Pour in the can of crushed pineapple and mix (better do it slow or you will have a face of flour) Add the drained mandarin oranges. Mix thoroughly and bake at 350 degrees for about 45 minutes to 1 hour or until top is brown.

Very light, low in fat and a great moist cake.

You can also make it without the mandarin oranges, but I think they make the cake :)

It DOES stick to the pan, so even though it says ungreased pan, I use the stuff for baking to coat the pan - and it makes a difference. As to the GTG, you never know :) I have the ingredients now, but doubt they'll last till then - but there are stores and shopping to be done before then.

That sounds good, Beth! I love mandarin oranges, so will add those as well. But you say to grease the pan, right? Makes sense to me.

What sized cans of crushed pineapple and oranges?
Barbie, Romeow, and Sophie, missing Lola! (and lots of ferrets running around in my heart!)

I redid my answer above... But I've since looked on my cupboard... The size can of oranges I have is 11 oz. I guess they've gotten smaller lol. Pineapples are still 20 oz.

do you cut up the orange pieces or leave them whole?

Whole, but I suppose you could do it either way.
