I keep consulting a map to see where places are. I am meeting my son and his family in Anaheim the second week of January and then made a reservation at LaGuna Beach and San Clemente, and then heading east to Lake Havasu after then.

Where are you staying in Laguna? Crystal Cove? And San Clemente has 2 parts -- one with hook-ups and one without. I'm assuming that you're going to be in the hook-up side -- it's called San Mateo.
I'm in Azusa. If you look at a map, it's at the intersection of the 210 and 605 freeways. We just got done hosting the recent "Madre" fire.
Puddingstone would be quiet and you'd have hook-ups, cell phone service, and access to shopping (but probably not on your bike). Lake Skinner would be more remote, and I'm not sure if you'd have cell service but you could call to ask. And Rancho Jurupa would have everything, but maybe not a nearby grocery store (on your bike).
If you'd like to be in northern San Diego County you could check out the campground at the casino in Temecula. It's close to everything so you'd have cell service. Going further east down will cut down on cell service pretty significantly. But you could get to Indio/Borrego Springs going out Hwy. 79. There's a pretty big hill you'd have to go down -- I'm sure Sharon can chime in on that.
If you'd like to check out San Diego more, then the Chula Vista RV Resort is really nice. Again, it's a bit pricey, but it'll be off-season and you might get a weekly rate that isn't too bad. It's right on the harbor and real pretty. Good cell service, too. And then there's Santee Lakes, right in the center of town. Some sites have at least water & electricity, and there's a dump station at the park. I'm sure they've got cell service, since it's surrounded by neighborhoods.
So. CA isn't known for its county parks, but we have some and they're quite nice. And we sure don't have COE parks like other parts of the country do.
With you coming out here, you ought to check out Quartzsite. Can't remember if you've been there or not. But it's an experience everyone needs to experience.
You might be able to head there after your time in Orange County with your son & on your way to Havasu.
