Hey Cudedog,
I have used a Coleman 2 burner stove for my camping trips for many years. I have the stove that runs off of a small, green propane bottle. There are different Coleman stoves and some have hotter burners than others. I have tried cooking with cast iron on these stoves and you just can't get it hot enough. It takes a lot of heat to get the cast iron heated up because it's so heavy. I have found that the inexpensive cookware actually works better. It's thinner and conducts the heat better when cooking on these stoves. I use my old aluminum Teflon cookware for camping when I buy new skillets for the kitchen. I couldn't even fry bacon in my cast iron skillets. So I would not advise buying any heavy cookware. Whatever you end up with, be sure to try it out before you leave town. You don't want to get to the mountains and find out that you can't fry bacon!!! Garage sales are good places to pick up kitchen supplies. It's cheap and if a pot or skillet doesn't work for you, just throw it away. I also have a small stainless steel bowl that I keep with me. It works for everything and is big enough to wash dishes in. Put it on the stove top and heat the dish water in it. Then move it off the stove and do your dishes. (This is not how I cook when I'm in my rv. This is how I cook when I'm truck camping.)
