I love the fish tacos at Rubio's Fresh Mexican Gril in Tracy, CA. Know it's not close for most of you. I could never imagine fish and tacos but, hey, yumbo!!

Late in the day, but I am parked for the night in Orange County, NY. At WalMart and using their WiFi. The backroads were pretty but tiring.

The family GTG in Cape May was so awesome, but I was ready to hit the road. Stopped in Mt. Hope to visit graves of my 4th great grands. I know I drove through areas of the county where several of my ancestors lived.

Got some catching up to do on here, but Mitch glad to know you are still planning on the Baja!!

Mitch, I didn't know you were planning to go to Baja! :? Good for you! Are you joining up with Beth?

God willin' and the creek don't rise and the chemo don't deliver a knock-out punch! ;)

I plan to focus my energy on finding the Perfect Fish Taco along the Baja Coast.
And then learning how to duplicate it.

The fish tacos at Maritza's in San Diego will beat Rubios anywhere, any day of the week...now, I don't know about Pedros....

Fish tacos are really big (ie; popular) in California. They claim to have invented them out there. Don't know if that is true tho. I don't like fish in anything, so fish tacos don't sound appetizing to me at all. I think if someone served me a fish taco in bed, it would certainly kill my "mood". Just sayin'...

Rubio's in Tracy, huh? Guess next time I go check on my rental I will have to visit Ribio's to form an opinion. I grew up in Tracy and still own my childhood home there.

Well, if you head to Tracy in the next couple months - make sure to do it on one of my days off and we'll check them out.

You'll all laugh but the best fish tacos I've ever had were in KY - when working at Amazon in Campbellsville - a couple towns over had a MX restaurant that has them.. YUM. But I had very, very good ones when I met Laura the other night and many other good ones. I never thought I'd be thrilled with fish tacos, but like them.

Mitch, most of the ones I have had in Baja were much more basic than what we do to them up here. They don't dress things up quite the way we do.

I had both tacos and Pedro in mind. Knew Mitch would think along those lines, but Carol you surprised me.

I spent a lot of time in Baja in the 60s and 70s. Tacos were basically a tortilla with what ever is leftover; meat, fish, beans, corn with what ever sauce and/or veggies you could find in the cupboard or frig. You could buy 100 tortillas for $1. Many times they served it with mayonaise!! We did a lot of diving and spear fishing in Baja while camping on the beaches and had lots of left over lobster, scallops & fish. So we grabbed a tortilla, threw in some lobster or fish, mayo, veggies, hot sauce and voila (or ESA! in Spanish) you have the traditional Baja "fish" taco!
