Low Carb Snacking Idea

I thought this was an original idea this morning, however, a Google search showed I was WAY wrong.

Anyway, for anyone trying to eat low carb for whatever reason, I just made these PORK RIND NACHOS!

Image'

Pork Rinds
Onions
Chopped Black Olives
Freshly Shredded Cheddar
Split Grape Tomatoes
Salsa
Pickled Jalapenos
Topped with Sour Cream after baking until cheese melted.

They were really delicious.

Eeeeew, aren't pork rinds pig skins? Isn't that what they make footballs out of? Ewww. I'm still trying to get used to chicken fried everything here in Texas.

Well, it sounds good to me, I love fried pork rinds...when I was eating really really low carbs I ate them with my fried eggs instead of toast...

My DH is always coming in with cracklins. I know they must be low carb because they are pure hog lard. :lol:

Are cracklins the same as pork skins?

Are cracklins the same as pork skins?

They are similar, but still have some meat on them. Typical of homemade instead of the kind you buy in a bag. http://www.beststopinscott.com/#Cracklins

ahhh yummy looking, except I'd have to leave out the jalopenos but I do like pork rinds, they are so crunchy and very addicting.
I can remember years ago I used to turn my nose up at pork rinds until I tasted them.... :P
