Roasted sweets & Onions

Cut 1 lb. of peeled sweet potato into 1/2 inch cubes
Toss with 1 large chopped onion and a mixture of
2 Tbs. Canola or olive oil
1 Tbs. Balsamic Vinegar
1 Tbs. Brown Sugar
2 tsp. reduced sodium soy sauce
Roast on baking sheet at 400 deg until potatoes are done (about 25 minutes)
Let stand 5 minute before serving

(gosh, I used to hate my mom's sweet potatoes at Thanksgiving - that casserole sweet crap with marshmallows on top - ACK!) (and thank you, Soos, for that wonderfully descriptive word - ACK! :) )

I wonder how many that's supposed to serve?

And I might try it without the brown sugar, too, but probably shouldn't do that the first time if I decide to make that for Thanksgiving. Thinking about it.

I would bet the sweet potatoes would have enough sugar by themselves that you would never miss the brown sugar. I do a sweet potato casserole (no marshmallows for me) and I bake the sweet potatoes before mashing. There's so much sugar brought out from the baking that I rarely add sugar - just butter and spices.

Made a version of this last night and loved it. I took one potato, cut up it with onion. Mixed with the low sodium.soy sauce and a tad of olive oil. Baked as said. It was very good. Oh, the only.reason the vinegar was left out is because I discovered I was out of it.

Glad you liked it.
I do think the vinegar adds depth to the flavor but agree it can easily not loose anything by omitting the brown sugar unless more caramelization is desired.
Roasting has become my favorite means of cooking root veggies. Usually just use a little olive oil but have been experimenting with a few other additions lately.

Sarah, me too - I started roasting asparagus years ago, and learned that I loved my vegetables cooked that way. If you like spice at all - a couple things I do with them - is simply olive oil and then a spice mix usually used in meat rubs (I sometimes make my own, but you can buy them - currently I'm using a bought one - Arizona Rub Rattlesnake. What I don't like about this one is it has brown sugar in it, but the sugars are 1 g per serving so I can live with that. And it gives the veggies good flavor. But I'd never done sweet potatoes this way - so kicked myself when I saw your post. So easy and so good. And I will get the vinegar for next time - cuz I do think that'll give some added flavor.

I am thinking that I need to find room for a small toaster oven in the Short Bus.....I would leave the bread toaster on the shelf if I could find a way to eat more healthy vegs.... :)

I'm thinking this could easily be made on the stovetop, too. Throw it all in a fry pan that doesn't crowd the veggies.

I make something very similar with sweet potato and at the end sprinkle them with toasted sesame seeds.
