Cranberry Chicken

Nan asked me to post this:

1 can whole cranberry sauce
1 envelope onion soup mix
1 jar of french dressing (I use Catalina)

Boneless chicken breasts or thighs.

Mix first 3 ingredients
Place chicken in baking pan.
Pour mixture over chicken.
Bake 350 degrees about 45 minutes

I serve with rice pilaf. The sauce is good over the rice too.

This is one of my all time favorite recipes. It's wonderful on pork chops too. When I was teaching I gave it to one of my students for a local pork cook-off and she went on to win the state competition. ;)

Is that French dressing like a whole bottle of dressing or there a smaller jar I haven't seen? Sounds good.

Florida gathering, you can see I missed on a couple of ingredients, so if you don't have it, experiment, it still tastes good.

I'm one of the few near non-cooks here but this was simple enough for me to try. Made it last night - excellent results and little effort plus now I have dinner for a couple more nights without any more cooking.

More kudos for this dish.
I proved the other night that you can screw it up and still come out with a good dinner.
First I forgot to mix in the onion soup powder so about 15 minutes into the cooking process, I just sprinkled it over the top. Then I got side tracked and forgot it resulting in over baking by about 40 minutes. Even with that, this makes so much sauce that the chicken was still moist and tender.

I remember how good this was when Liz made it, and it will be on our menu in the next week. If you haven't tried this, it's a must have!

I made this last week using 8 chicken legs and 3 thighs, all bone in. Baked covered for an hour then uncovered for 20 min until done by thermometer (165). Really good. Been making it about 20 years. Everyone seems to like it even those who are not sure they like cranberry. Used 1 can whole berry cranberry and 1 cup Catalina dressing and 1 envelope Lipton onion soup mix.
