A friend posted this recipe on RV America (women's RV forum). I tried it today...it works. Perfect for a single serve dessert.

3, 2, 1 Cake

These individual little cakes are amazing and ready to eat in one minute! They are perfect for whenever you feel like a treat without all the fat and calories that cake can have. Genius idea!

Servings: 1

Ingredients:

1 box Angel Food Cake Mix

1 box Cake Mix - Any Flavor

2 Tbsp Water

Directions:

In a ziploc bag, combine the two cake mixes together and mix well. For each individual cake serving, take out 3 Tablespoons of the cake mix combination and mix it with 2 Tablespoons of water in a small microwave-safe container. Microwave on high for 1 minute, and you have your own instant individual little cake! Keep remaining cake mixture stored in the ziploc bag and use whenever you feel like a treat! You can top each cake with a dollop of fat free whipped topping and/or some fresh fruit.

Helpful Tips:

This recipe is called 3, 2, 1 Cake because all you need to remember is "3 tablespoons mix, 2 tablespoons water, 1 minute in the microwave!" Try various flavors of cake mix like carrot, red velvet, pineapple, lemon, orange, etc. Just remember that one of the mixes has to be the angel food mix; the other is your choice. The flavor possibilities are endless!

That's an awful lot of cake mix, wonder how long it stays fresh?

Ok, Birdie and I have both tried this....a few times. This recipe now has our official stamp of approval. It should come with a warning about habit forming/addiction possibilities tho.

Ah, yes, Liz that Chocolate one you did was better than mine. Mine was Dutch Chocolate. Sistahs, I have, experienced with Colleen, Carrot, Dutch Chocolate, and White. I tried plain Angel Food and plain Angel Food with lemon crystals and that didn't work. Then, the oooops a couple of days ago, I did 3, 3, and then didn't want to throw it out so I added more mix and whipped it all up. It went over the top but it was really good.

So Sistahs,,,,try this and Sharon don't worry about how long it will last in that plastic bag, cause when we meet up we can do 'one a day'

I'm guessing it won't last very long in the bag....due to that habit forming problem.

What sized container? Like the size of a cupcake or a coffee mug?

Wow, a recipe that even I can do! No oven needed. I usually avoid this thread. I may be in deep trouble now!

Tina, one a day does NOT mean 'per meal'

Seriously, it is so neat to have a little desert and not have to worry about what to do 'with the rest of the cake' (except eat it). I have managed to not have any whipped cream available, but I did eat all the ice cream with the cake    . Now out of ice cream and have enough cake mix for the next GTG.

Wonder if that mix would freeze if stored in freezer? That's where I keep sugar and flour which I almost never use.

Oh, it doesn't? You didn't tell me that. One after lunch, another after dinner....seemed to be obvious to me.
