Here you go Barb per your request. I don't measure so all ingredients are guesstimates!

Topping
1/2 C sugar or less depending how sweet the peaches are and how much sugar you like.
1 rounded teaspoon of flour
1 cup milk
cook till desired thickness (not too thick) and add butter & vanilla to taste
When cobbler/pie is done pour over top while still warm

I actually make a cobbler as I only use a top crust

For cobbler slice peaches directly into the pan you intend to bake in. I usually do a glass 8 X 8 square. This size will take around 4-5 peaches.
Fill within about an 1 1/2" of top with peaches, sprinkle with sugar to taste and cinnamon stir around to mix, dot with butter and place pie crust on top, If you don't do a lattice crust use a fork or knife to cut small holes in the crust.
Bake at 350 till crust is browned. Remove from oven and cool just a bit and then pour your warm topping over. If you want though the topping can be served on the side. I usually add a bit of cinnamon to the topping also.
Enjoy!
