Chocolate dipped Ritz peanut butter cookies

I think I posted this last year but.... anyway, these couldn't be easier and are soooo good!

Box of Ritz crackers
peanut butter
and chocolate almond bark to melt. (Have no idea why the word almond is in the name.) ;)
some tin foil to put the cookies on to set

Melt the chocolate as directed on the pkg
Put some peanut butter between two Ritz crackers and using two forks, roll it around in the chocolate to coat.
Place on tin foil to set.
How easy is that?

I tried it with marshmallows and the peanut butter, but when the marshmallows melted it got messy.
Still good, but messy.

Sounds easy enough for me to try! I was thinking that I could just get the mini Ritz peanut butter sandwich cookies and just dip those. The marshmallow does sound good too! Was the marshmallow in between the crackers or by itself?

I tried them last year with the canned coconut pecan frosting. They were good too.

I made them last year with coconut pecan frosting...they were good. Think I'm going to try that recipe with Oreos and creams cheese and try the mint Oreos. Might as well pack a few more inches on my hips. :roll:

Hmmm...double post...thought I had lost it.
