Candied Bacon

I found this on cnn.com this morning.
It sounds delicious...

Candied Bacon

8 smoked bacon slices (we slice these very thin from a slab with a slicer)
4 tbsp light brown sugar
1 pinch cayenne pepper

Preheat oven to 325°F

Drag bacon through brown sugar till lightly coated arrange on silpat* on sheet pan.

Sprinkle remaining brown sugar and cayenne evenly over slices.

Place another silpat on top and place in oven.

Bake for 15 min, raise oven temp to 375°F and bake for 5 min, check and see if crisp.

Check every min until ready. Be careful because it can burn easily.

Starting low keeps the bacon flat during cooking; otherwise it would ripple.

A silpat is a silicone baking sheet. If you don't have any on hand, you can use parchment paper.

Sounds yummy! But I'd have to make more than 8 slices at a time or Ronnie would do a roll by and swipe it all! :lol:

Oh, with all the holidays coming up I feel more pounds to adding to my round!

As my apron says: 'too many square meals make a person round.

OMG - the flavor combination is out of this world.

However, it was next to impossible to get the bacon crisp.
I baked/broiled it so long, the sugar caramelized to almost the hard crack stage!

I used two pieces of parchment paper and did the 325 thing first.
Recipe was correct - bacon was flat! I always bake my bacon, so that was a good tip.

Anyway, what I would do next time (oh, and there will be a next time - what a treat!), is bake it to almost done and then sprinkle top side with the brown sugar and cayenne.

I wanna go try a few more pieces, but I won't.

Mitch, what are the carbs and sugar for that. I know the fat is out on the perimeter, but the carbs would allow me an idea of how many days left to live I'd have. :o :lol: :roll: Let me know if you try it a little thicker, too. I love my bacon 'stretchy' to eat, not crisp. Just wondering. Not much to do over here in the mountains. But it is cool enough I could do some bacon goodies - if I can find the bacon. :roll:

Ohhh yes! We had a friend make something very similar to this in his smoker. Only he had wrapped the bacon around water chestnuts, sprinkled with the brown sugar and cayenne and baked them. Awesome.

Mitch... I don't use the silpat or paper.. I use a wire rack over cookie tray.....everything does crisp up well and it is delicious !

Uh oh... I'm heading into the kitchen...oh no have to get bacon...LOL like a flash after the Doc visit today...Bacon Bacon Bacon..

Gawd that's a good one.. going to Heart Dr come out buy Bacon... what more could a gal ask for :)
