Crock Pot Stuffed Peppers

I'm back.. but only for a short bit.. have two recipes to post.. which I'll be making this weekend.

Hope you enjoy them.. and if you make them and do any changes .. please post so others can share as well..

Crock Pot Stuffed Peppers.

4 medium green peppers

1 lb. very lean ground beef or turkey

¼ c. onion, finely chopped

1 egg or ¼ c. Egg Beaters

1-1/2 c. brown rice, cooked (or white rice)

1 t. salt

½ t. pepper

1 jar (32 oz.) spaghetti sauce

Combine ground beef/turkey, onion, rice, egg, salt, and pepper. Mix well.

Cut tops off peppers; hollow out any seeds.

Stuff peppers with equal portions of meat mixture.

Pour just enough spaghetti sauce into crock pot to cover bottom.

Place peppers in crock pot. Cover with remaining spaghetti sauce.

Cover. Cook on low 6-7 hours, or until meat is cooked well and pepper is tender.

***OPTIONAL: Top with shredded cheese and cover till cheese melts..


PS.. I use a round crock pot about 4 quart..

Carolyn, You are most welcome.. now on this recipe I'm using Red Peppers as hubby don't do Green Peppers that well.. sooooo.. it's color me Red for dinner tonight.. but they smell great...

Also, if you go back in the recipes here you'll find lots more too....
