Corn and black beans
Posted: Sat Sep 18, 2010 8:36 pmI found this recipe in my Eating Clean magazine and tweaked it a bit. I liked it both hot and cold.
1 can black beans, drained and rinsed
2 ear yellow sweet corn cut from cob
1 shallot chopped
1 clove garlic minced
I saute'd everything in abt 1T of ollive oil, till the shallot got tender and corn turned dark yellow.
