Crock Pot Banana Cream Upside Down Cake !

Well, this morning I got an Email with this lovely recipe...Now how could I not share.. I mean it's another Crock Pot Goodie... and ya all know how much I love my Crock Pot... So I had to share...

Banana Cream Crock Pot Upside Down Cake
Cooking spray
3 Egg whites
1 cup Mashed banana
2 1/2 cups Water, divided
1 box ( 18 oz.)Yellow cake mix, reduced sugar (do not make as directed on box)
1 box (3 1/2 oz.)instant banana pudding mix, ff, sf,dry

Spray 3 quart slow cooker with cooking spray. In a large bowl beat the egg whites with a mixer on high speed until soft peaks form, about 1-2 minutes. In a separate bowl, beat the bananas with the mixer beat on high until pureed. Put the pureed bananas in with the egg whites. Add 1/2 cup water and the dry cake mix to the eggs and bananas. With the mixer beat together for about 1-2 minutes, scraping the sides of the bowl occasionally. The batter will be thick. In the prepared slow cooker stir together the dry pudding mix and the remaining water. Stir until completely dissolved. Pour the prepared cake batter over the pudding mixture. Place a paper towel on top of the slow cooker. Place the lid of the cooker on top of the paper towel to cover. Cook on high for 2 hours. Place a large serving plate with an edge on it (so the sauce won't overflow off the plate) upside down on top of the slow cooker. Holding the slow cooker and plate firmly together, with both hands, carefully flip the cake upside down. It will be hot. Sauce will drip down the sides of the cake.

Yield: 8 servings. Per serving= 284 Calories; 5g Fat (14.1% calories from fat); 3g Protein; 61g Carbohydrate; 2g Dietary Fiber; 0mg Cholesterol; 661mg Sodium. Exchanges: 0 Lean Meat; 1/2 Fruit.

what is ff and sf stand for?
What sized crock pot? Imagine it can't be too big if you have to flip it over!
Why the paper towel?
Sounds yummy! Just gave away my crock pots tho. Will have to wait until I get settled in CA and buy more kitchen stuff, to try this out.

Of all your questions, Barbie, I can answer one. :lol: It says 3qt. slow cooker.

Thanks Vickie :lol: I had to look again and see if I didn't put the size of the crock pot in ..but I did !!...

Ok, Barbie... the SF means ...Sugar Free
the FF means..... Fat Free

How my doing so far ??? Oh yeah.. and the paper towel.. well here's the reason for that...


The Paper towel under the lid will absorb the moisture.. as you see a Crock Pot more or less kind of steams what
you cook..follow me so far.. one reason why a lot of recipes don't use a lot of water unless you are making soups or
gravies...

As for the size.. well, this was made in a 3 quart and you have to turn the crock pot upside down for the cake to
come out with the sauce to be on top... Hence.. the term Upside Down .. :lol:

Hope that helps... other than that.. I'm ready to go to bed.. so brain is in slumber mode hahaha...
