Hash Brown Quiche-YUMMERS!

Ok, let me just say, one of my pet peeves is when I spend my time & $$$ to "test" a recipe to have it bomb, and to have to toss the sucker away!!!
I am also a very pickey eater...but....I love this quiche, I'll make one and eat it every morning, if there is any left, my family loves it too...
The following is an easy Hash brown quiche recipe from Paula Deen. I like some of her "stuff", but not a whole lot. I guarentee this is a winner!

Hash Brown Quiche
Recipe from Paula Deen

Preheat oven to 450 degrees F.

Crust:
3 cups shredded frozen hash browns (thawed & drained) I wrap them in a paper towel and get out excess dampness too
1 stick melted butter
½ tsp. salt
¼ tsp. pepper
________________________________________

3 large eggs, beaten
1 cup ½ & ½
¾ cup diced/sliced cooked ham*
¼ tsp. minced dried onions
1 tsp. sliced scallions (green onions)
1 cup shredded cheddar cheese
½ tsp. salt
¼ tsp. black pepper

Spray glass pie plate with PAM (I use butter flavor)
Mix hash browns with melted butter, s & p and pat into plate to form crust, work up the sides of plate too.
Bake in 450 oven for 20-25 minutes

When crust is done, reset temp. to 350 degrees F.

Mix the rest of the ingredients together. When crust is cooled a bit , pour egg mixture into crust and return to 350 oven to bake for 30 minutes.

* Options: I have also switched the ham for ½ lb. of cooked bulk breakfast sausage. Also, broccoli & cheese is great too!

Sounds really yummy but as all Paula Dean's recipes, way too much butter for my poor old arteries.

That does sound Yummy. I would imagine one could cut down the butter and still have it taste good. I don't think using less butter will alter the outcome. What time should we arrive for dinner? :D Linda

Hey, ya'll (this from a Joisey gal,hahaha) let me know when you will be here and I will have it ready. Yes, I know, Paula is the butter queen...that is one reason I do not like alot of her stuff, oh yeh, and I don't eat any fish (allergic reactions) and she is famous for her fish dishes. Cut the crust down to a half stick of butter and you will not even no the dif. Still a very yummy brunch dish. Worth the try..

Bet you could use Smart Balance Light w/ flaxseed oil....would be just as good and good for the arteries, too. Use the broccoli instead of the ham and it's doubly good for you. May be something to think about for the Ar GTG along with the artery clogging biscuits and gravy I'm making. Gotta make the biscuits or Vickies Ronny will never forgive me and the gravy for the Boy Chick to counter the hang over he's gonna have from the Alligator Piss and Pudding shooters.
