Angels on Horseback

First let me say I don't eat oysters, but I cook them for Ronnie, he LOVES them. Tonight I cooked regular fried oysters and Angels on Horseback or Bacon wrapped oysters. I thought since Mitch hadn't heard of them, some of you might not have either, I know Acadianmom and Marlset have, lol.
First pic is of a gallon of raw oysters. One of Ronnie's friends does that for a living. We got a sack and had him shuck them for us. The remaining oysters will be packaged in dozen to a bag and frozen. Don't yall all wish you lived on the gulf coast!

I wrapped them in bacon and skewered them with toothpicks.


Then I seasoned some flour with Tony Chachere's. I sometimes use a cornmeal/flour mix.
Dredge the oysters in the flour, making sure to coat everywhere.

I heated the oil in my deep fryer to 375 and cooked them 5 at a time, so not to cool the oil, for 3 minutes.

Drain on a paper towel, don't cover them if you want them to stay crispy.


Ronnie's plate, yes he ate them all. Sometimes he has me make a ketchup dip, but didn't want any tonight.
