Summer Squash Casserole

2 to 2 1/2 lbs yellow squash
1/2 cup butter
3/4 cup chopped onions
15 Ritz crackers - crumbled
2 eggs beaten
Salt and pepper to taste ( I use Tony's seasoning)
1 cup grated cheese

Topping
1 1/2 cups Ritz crackers crumbs
1/2 cup butter

Slice squash and cook until tender. Saute onions in 1/2 cup butter and mix with squash. Add crumbled crackers, eggs, seasoning and cheese.
Place mixture in a 2 qt casserole dish. Combine 1/2 cup melted butter with cracker crumbs. Sprinkle over squash mixture. Bake at 350 degrees until bubbling hot.
I think I cook it about 30 minutes. I like the topping crunchy.

Have to figure out how to make it without crackers! I love summer squash , but can't have grains including crackers.

Ummmm, bacon! Anything is better with bacon, even ice cream!

Everything's better with bacon. lol Like most recipes there are hundreds on the computer. There are probably some without crackers.
