Chicken Tortellini Soup

Chicken Tortellini Soup
Servings: 4-6

Ingredients

1 tablespoon olive oil
1/2 medium onion chopped
3 sticks celery finely chopped
3 large carrots peeled & chopped or sliced
2 cloves garlic minced
1/2 teaspoon Italian seasoning or poultry seasoning
32oz chicken broth (1 container)
1-2 cups water
2 cups cooked chicken (or more, to taste)
1 pkg refrigerated 3 cheese tortellini
Salt & pepper to taste
Chopped parsley or fresh spinach to taste

Steps
Add the olive oil and onion to a large soup pot. Sauté over medium-high heat.
Add the celery, carrots, garlic, and Italian or poultry seasoning to the pot. Give it a good stir and continue cooking for a few more minutes.
Add the chicken broth and water to the pot. Increase the heat to high, and once it starts to boil, reduce the heat to a rapid simmer and let it cook for 10 minutes or until the veggies have softened to your liking.
Add the chicken and tortellini to the pot. Increase the heat to medium-high and let the soup cook until the tortellini is cooked. If it starts to boil furiously, you may need to turn the heat down again. Add spinach before serving if desired.
Season with salt & pepper as needed.. Serve immediately.

NOTES:
The tortellini will soak up the broth the longer it sits, so this soup is best eaten right away. The leftovers are still tasty, but you may need to add more water or chicken broth.
Serves 4-6 depending on portion size/what it's served with.

sounds really good... when you said that the tortellini soaks up the broth I wonder if you could scoop them out store them elsewhere and add back in for the reheat... just a thought
I will need to try it next time tortellini sounds good

I just reheated my soup and the tortellini was fine I thought. If I had a big batch I would probably only cook half of the package. It is found in the refrigerated section and one package was plenty as they "grow" as they cook ha ha

Question? How do you think it would be without the chicken? I will make it with sometime, but sometimes would like it possibly without.

You dont need the chicken. I used chicken broth, water, a little poultry seasoning and veggies. I did add some chicken I had but wasn't necessary to the recipe. I also threw in some mushrooms. It is pretty flexible recipe. I like it with the tortellini instead of the egg noodles I usually use for chicken noodle soup.

Thanks, Karen. I know, I rarely follow any recipes lol but I like to use the basics from them. (And use up veggies I have on hand.)
