Chicken Pot Pie for One in air fryer

I'm going to try this next week.

Chicken Pot Pie for One

Ingredients
1/3 cup diced carrots
1 t butter
1/3 corn
1/4 cup chicken or veggie broth
1/2 cup cream of chicken soup
1/4 cup sour cream
1/2 t garlic paste
1/8 t salt
1/8 t pepper
1/8 t dill
4 oz chicken, chopped or shredded
Pie crust cut to shape of baking dish
1 egg

Steps
Saute carrots in butter until slightly softened
Mix together broth, soup and sour cream until smooth
Turn heat on carrots to low and add remaining ingredients and mix to combine
Pour mixture into 6 inch baking dish or pie pan
Cover with pie crust, cutting slits to vent
Brush crust with egg

Preheat air fryer to 350 for 3 minutes. Place pot pie in air fryer and cook for 10 minutes. Adjust temp to 400 and continue cooking 2 to 4 minutes to brown the crust.

Swap any veggies or seasonings to your own taste.

I finally made this and it's a keeper. I had purchased a 6" Ramekin but it ended up having a rim at the top which made it not fit in my air fryer. So, I used my 4" ramekin and split the recipe between the two and with some extra veggies, it filled it up and worked perfectly. As much as I like garlic, I think I'll omit it next time. And I like that this way I get two meals. The uncooked ramekin is in the fridge for tomorrow. That makes this probably not really healthy meal a little better lol. I used Rotisserie chicken, and sauteed onion, celery and carrots this time because I had them on hand.

That sounds really good and easy, I use my ramekins all the time for individual servings. Works out nicely usually. I will be trying this.

Sheila, first. Here's how to make self-rising flour:
For each cup of flour, whisk together with 1 ½ teaspoons of baking powder and ¼ teaspoon of salt. Make sure to whisk all of these ingredients together well so that the baking powder and salt are both evenly distributed within the flour.

Simple, eh?
