Bread Pudding via Microwave

5 Slices of Bread torn in pieces (I use Cinnamon Raisen Bread)

2 cups Milk
1/4 cup butter (or margarine)

1/2 cup brown sugar
pinch of salt
2 lrg eggs (beaten)
1 tsp of vanilla

1/2 cup raisens, or dried cherries or mixed

*if using plain bread make sure to use

cinnamon
nutmeg


Use an 8inch square glass dish, spread bread cubes out.

In a 4 cup Glass measuring cup heat the Milk and butter on 7 (or 70% power) for
2- 3 minutes so that butter melts but not boiling.

In another Glass measuring cup mix the brown sugar, salt, eggs and vanilla well

Then I add a little of the hot milk into the Egg mixture mix well and then pour the
Egg mixture back in to the rest of the hot milk, again mix well then, I pour it over
the bread cubes.....I sprinkle a little fresh nutmeg over the top.. cover it with
wax paper and heat it on 7 (or 70%power ) for 8- 12 minutes.. (again depending
on your microwave) Center will be a little soft but will set up

I serve this with cream over it.. (fat free half and half )

I made this recipe when I first got my "Radar Range" ....and it was in a book
made with regular day old bread...but I changed it to Cinamon Raisen Bread
Your choice ...what ever you have on hand..

This is great when I have unexpected company.. and you all know my house is a "Hotel"..
