Dream Potatoes

I know I've posted this before but I can't find it.

DREAM POTATOES

5 pounds of potatoes, peeled cooked and mashed to kind of a dry mash with some potato water (russets work best) 3 average size potatoes equal about 1 pound

To the hot mashed potatoes beat in until smooth and creamy:

8 ounces of softened cream cheese (low fat or no fat is fine)
1 cup sour cream (low fat or no-fat is fine)
1 teaspoon salt
¼ teaspoon white pepper (black will work)
2 tablespoons softened butter or margarine
Generous dash of garlic powder (optional)

Place in a casserole. These potatoes can be refrigerated up to 2 weeks or freeze them and use in 2-3 months. Bake at 350 or microwave until heated through. I use these for holidays and heat them in the crock pot. I can make them ahead of time and I don’t have to mess around with making mashed potatoes just before the meal is served.

you have sour cream listed twice??? did you mean cream cheese and then sour cream?

She has "sour cream" and "cream cream". Not sure what "cream cream" is supposed to be... :?

Sounds delish Pat. I think I will make these for at Kathleen's next week instead of my cheesy potatoes.

Sheila...brought this back to the top for you. Would work great for you to make for you and your mom. Make the 5# and freeze in meal size servings. My friend's son made these for his in-laws Thanksgiving one year....he is now in charge of the potatoes for every Thanksgiving, Christmas and Easter. My neighbor uses Yukon Golds washes them good and cooks and mashes them with the skin on them. She calls them Dirty Mash. They're good.

These potatoes sound like what we had at the Cattleman's Banquet. They were really good. I freeze mashed potatoes in single servings all the time. Some times instead of putting it in containers I take a 1/2 measuring cup put the potatoes on a plate with wax or parchment paper in mounds. I put the plate in the freezer and when the potatoes are frozen I put them in a zip lock bag.
