
Turkey Tetrazzini In A Pan
Serves: 2
Ingredients
• 1 Tablespoon butter
• 1 can sliced mushrooms
• 1/2 chopped onion
• 4 ounces pasta, broken into even pieces
• 1 cup chicken broth
• 1/2 cup heavy cream
• 1/2 cup frozen peas
• 1 cup shredded cooked turkey
• 1 Tablespoon minced parsley
• Black pepper to taste
• Dry Sherry or white wine (optional)
Directions
• Melt butter in heavy skillet and saute onion and mushrooms until translucent.
• Add chicken broth, cream and pasta.
• Bring to a boil then reduce heat and simmer until pasta is al-dente checking frequently.
• Add parsley, peas and turkey and cook until thoroughly heated.
• Add pepper to taste and a splash of dry sherry or dry white wine if desired.
