Easy Pumpkin Muffins 3 ingredients

I keep seeing this recipe going around Facebook and in emails. I just could not believe it would work and everyone I know who had seen it asked, has anyone tried it? So today I did just that and it's a winner!

Ingredients :
1 yellow cake mix ( I am going to try a spice cake next time)
1 (15 or 16 oz) can pumpkin ( not the pie filling just the puréed pumpkin)
I chose to add a tbsp of pumpkin pie spice but it was not on the recipe I saw

I really thought they must have left out liquid. They did not.

Open pumpkin and dump into mixing bowl. I stirred it until it was more or less smooth. Dump in the dry cake mix and pumpkin pie spice if using. Stir until well mixed. You will think as you begin that it will be a really stiff batter. It actually becomes a normal moist muffin type batter. Fill muffin tin or papers about 2/3 to 3/4 full. Bake at 350 for about 20 min until toothpick comes out clean. I topped with some cream cheese frosting I had, but they were delicious too witha dab of butter. Made 20 muffins. I thought how easy to carry those two ingredients in the rv pantry for a quick put together for a snack or potluck.

I'm not much of a cook, especially baking but have used variations on this muffin recipe for years. Really difficult to mess it up. Did last time with a boxed carrot cake and half an over ripe banana. I usually add a little apple sauce for extra moisture. Think I might try my next batch with Ginger Bread mix.
BTW: The muffins freeze well.

I'm about to try this, but since I don't have muffin tins, I'm doing it in a pan. I'll let you know if it works or not....

I tried these last week. Even though I over cooked the, they were good and disappeared :P Today I bought a spice cake mix to try with the can of pumpkin :P

Ok. Used a 9x13 and baked it for 25 minutes. It was good, especially with the cream cheese frosting...

I have been doing these for years. Actually got the recipe from Weight Watchers website. I use chocolate supreme or double choc cake mix. :D can add choc. chips, too.

Small Quantity Experiment

So, you know how "precisionistic" I am. I really wanted to try this recipe, but hated the thought of using an entire box of cake mix and the whole can of pumpkin, just to have to throw most of it in the trash. Well, canned pumpkin can be successfully frozen! (gosh, I love Google)

I got the total weight of each ingredient and figured the ratio should be approximately 1:1.

I mixed 60 grams (about 2 oz.) of each and it was a perfect size for a chubby diabetic who lives alone...(yes, Vickie - about half of my muffin went in the trash, or I would have eaten the whole thing!). It was really delicious, albeit a bit undercooked. I made a tiny amount of "frosting" from some milk, powdered sugar, and some cream cheese (jalapeno cream cheese - that's all I had).

There are 5 x 2 oz. mounds of pumpkin in the freezer, on a tray. When the mounds are frozen solid, I will put them all together in a zip lock freezer bag for future use. The remaining cake mix is sealed with a rubber band in its original packaging.

I should be a good sister and send this recipe to mine. She loves pumpkin everything and anything. Me, I like the seeds and that's about it.

Looks like a success, Mitch! I would have made them all and then had to freeze the muffins (had I been interested in pumpkin muffins).

they are made with canned pumpkin.
Know the muffins freeze well because I've done that. Did not know you could freeze left over canned pumpkin. Thanks, Mitch.
Beth: surprisingly, you cannot taste the pumpkin or at least it is very faint.

Next time I make them, will try gingerbread mix with a lemon glaze on the ones that don't make it to the freezer.

Didn't know that, Sarah - made me interested again ... and Lenora, using chocolate cake mix makes me more interested ... but won't do it with sugar so need to get the sugar-free. Now, if they'd start making cake mix with stevia!!!

I buy them without sugar. But would prefer Stevia as the substitute.
