Veggie Salad

got this recipe the other day at a party almost didn't try it because I simply don't like canned peas period no way no how till this dish and even then I'll try it with frozen peas to see which I like best...
1 can corn (whole kernel)drained
1 C. chopped celery *
1 C. chopped peppers*, your choice of color I used green as did the lady that made it
1 C. green beans chopped to pea size
1 C. onions (green or walla walla or sweet)
1 sm. can pimento (optional)
1 tsp. each salt and pepper
dressing
3/4 C apple cider vinegar
1 C. sugar
1/2 C. salad oil
bring to a boil then let cool and add to veggies
*when chopping think you want them all very close to the same size as say peas
didn't put in the pimento it said it's optional and I don't do them either :lol: really I like most things but this salad had two things I don't like
and it's still yummy

A cup of sugar in a veggie salad? Is that a typo?

Like you I don't like canned veggies, so I would use fresh peas and corn cut from the cob.

nope double checked ...it the dressing reminds me of the dressing on three bean salad I'm sure you can make adjustments

Alrighty I'm confused! :? I've read this recipe several times and I don't see any peas! Or are you saying that you didn't want to try it because you thought the green beans were peas? It does sound like a 3 bean salad dressing only mine doesn't use that much sugar either. I put all kinds of other things in my 3 bean salad....mushrooms, a can of the baby corn...one time I threw in a can of hominy and my DH thought it was wonderful....I hate hominy.

I had no idea that hominy is actually corn. I always assumed it was a grain. Why isn't it called corn?

hominy is corn? never heard that before is it a more mature corn? field corn?
it's not a veggie that I grew up with but when I've seen it, it appears to be larger than the
normal kernel of corn

Definition: Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size.

Hominy can be made with either white or yellow corn, specifically maize, which is the type of corn used in making corn meal and other grain products — as opposed to sweet corn, which is the vegetable that can be eaten on the cob and so forth.

Once soaked, hominy can be dried and then ground and simmered to make grits (also called hominy grits). Alternately, the processed hominy can be cooked until soft and then used in soups, stews and casseroles. Posole is a traditional Mexican soup made with hominy.

I've not actually seen hominy, just recently noticed canned hominy in our local store and it had corn on the label. So if I opened that can what would it look like? Would it be heated and eaten as is or only as an ingredient in another recipe?

It's like puffy white or yellow corn kernels, in a clear liquid. Some people eat it warmed from the can, my Mom liked it like that.
