I just found this recipe over on rv dot net. It sounds interesting and I was wondering if anyone here has ever made something similar?
I think I'll give it a try, and try to use less sodium...

Pressed Chicken (old family recipe)

Boil and de-bone a chicken (or parts) & save broth. Chop meat into small pieces, but not diced. In small bowl combine 1/2 cup broth, 1 pkg unflavored gelatin, 1 cube chicken bouillon that was dissolved in a bit of boiling water. In large bowl, mix light & dark meat, 3/4 tsp. sage and diced onion to taste. Pour gelatin mixture over meat and toss to coat evenly. Press mixture in a container (breadpan works) weight down and chill. Unmold and slice for sandwiches. I've pressed this into a round plastic juice container to make round slices which fit buns. Low fat, all natural.

I'm with you Sharon. Sounds like a kind of spam for chicken. ACK!
