Tina, you can toast bread in a toaster oven. If you can only have one, would definitely go with the toaster oven. I had one with me until I got the micro-convection - and now you should see me toasting bread - takes awhile, but it will toast in the convection oven.

Tina, I agree on the toaster over and am seriously considering one for Magic.
Roasting the veggies just adds so much to flavor over most anything else I've tried - plus it is easy (my only kind of cooking these days). Think I'll try some fennel with butternut squash for next experiment.
Peggy - I had not thought of the sesame seeds; will add to my list.

Okay made a batch of this up today. It is now in the oven in an iron frying pan. We had to improvise a bit. Will let you know how this turns out. :roll: :lol:

Made this recipe for Thanksgiving.

The flavor was excellent.
However, the potatoes were a little undercooked.
Next time, I would increase the roasting time by 10-15 minutes (I like sweet potatoes thoroughly cooked)

The only change I made was instead of plain low-sodium soy sauce, I used Ponzu sauce - a soy sauce based sauce with citrus (I love tart).

A definite keeper recipe.

I think I cut my pieces smaller - so they actually cooked a bit faster. Going to have to look for Ponzu sauce - sounds good. (But I'll keep my recipe sugarless).

After the first batch which was very good, I decided to do this again and add some cut up apple.. it was delicious. You know I can't leave a recipe alone. :lol:
