Crockpot Mexican Corn Bread

I made this at the AR gtg and not a bite was left. Made it again in WI for a group of my sis's friends, again, all gone. So I guess it gets a thumbs up.

1 lb extra lean ground beef
16 oz cream style corn
1 C corn meal
½ tsp baking soda
1 tsp salt
¼ C oil
1 C fat free milk
2 eggs beaten
½ C taco sauce
2 C shredded cheese (I use Mexican variety)
1 med onion, chopped
1 clove minced garlic
4 oz can diced green chilis

Brown and drain meat.

Combine corn, cornmeal, baking soda, oil, milk, eggs and taco sauce. Pour ½ of this mixture into the crockpot.

Layer cheese, onion, garlic, green chilis and beef on top

Cover with remaining mixture.

Cover and cook on low for 6 hours.


Don't try to remove it from the crockpot to serve. Easiest just to take the lid off, put in a serving spoon, and dig in.
