Green Chili Stew

This is basically one of those dish's you can make your own. I've had it many different ways, but this is how I make it:

2) Chicken breasts (boneless, skinless) or 1 lb of chix parts
2) Med potatoes, peeled and cubed
1) cup of mixed veggies, your choice (gr or red bell pepper, carrot, tomato, cabbage etc.) or no veggies, also your choice
2) cans chopped green chili, mild, med or hot
4-6) cups chix broth
garlic to taste
Cilantro, stemmed and chopped

Cut chix breast into bite sized pieces (or slices or leave whole) brown in small bit of oil or Pam spray in a pot. Add rest of ingredients, except cilantro, simmer until chix shreds easily. Ladle into bowls, top with cilantro and serve with tortillas, sopapillas or crackers. So yeah, it's just your basic chix-veggie soup with the addition of chilis and cilantro. But it's good!! LOL!
