Apple Cake, II

Okies, I have my favorite apple cake recipe and told Zeee I'd post it too:

Apple Cake

1½ cups oil
2 cups sugar
3 eggs
3 cups flour
1 t salt
2-6 t cinnamon (I use 5-6)
1 t baking soda
1 t vanilla
3 cups peeled, cored, thinly sliced apples (I use tart - Jonathon's, Granny Smith, etc)

Preheat over to 350 degrees.
Beat oil and sugar together.
Add eggs, beat until creamy
Add vanilla
In separate bowl, mix flour, salt, cinnamon and baking soda
Stir dry mixture into batter with spoon (can use elec mixer)
Add apples and stir
Pour batter into buttered/floured Bundt pan
Bake about 1 hour 15 minutes
Cool in pan.
Sprinkle with powdered sugar.

This is my fav apple cake. Maybe some day we'll have an apple cake bake-off :)
