Pinapple Upside Down Biscuits

Just got these emailed to me.. thought oh my these sound simple enough and yep you can make them lite too...so I'm gonna do these on Sat....Got all the fixin's too !!

Pinapple Upside Down Biscuits...

10 maraschino cherries
1/2 stick light butter at room temp (or regular)
1/2 cup packed light brown sugar
1 (10-oz) can crushed pineapple (drained and reserve liquid)
1 (12-oz) package refrigerated buttermilk biscuits (10 count)

Preheat the oven to 400 degrees F.

Spray 10 cups of a muffin tin. Strain the can of crushed pineapple, save juice for later. Combine pineapple, sugar, and butter, mix well. Divide the pineapple mixture among the muffin cups. Place a cherry in the center of each muffin cup, making sure cherry hits bottom of cup. Place 1 biscuit in each cup on top of sugar and pineapple mixture. Spoon 1 teaspoon reserved pineapple juice over each biscuit. Bake 12 to 15 minutes, or until golden. Cool for 2 minutes. Invert the pan onto a plate to release the biscuits. Serve warm.

Once again - thanks for another great-sounding, crowd-pleasing recipe!

I've never bought maraschino cherries in my life. I've seen them on the shelves but can't place where in my mind...pickles section?

Mitch... In my grocery store it was always over in the canned fruit section where you also could find the
mixed drinks...wonder if they were thinking..aaaaah Shirley Temples hahahaha...

Perhaps check where the boxed cakes are too... Let me know where ya do fined them...:)

OMG - these were soooo good. I'm not nuts about sweets (nuts, yes -especially pecans), but I digress. I'm not crazy about sweets and these are the absolute perfect amount of sweet. I made a half batch (5) and just finished 3 all by myself. I was taste testing for you ladies, you know. I threw myself on the calorie sword for YOU!

And I've never bought maraschino cherries in my entire life. I can't remember ever having eaten one. Couldn't find them this afternoon at Walmart and of course, couldn't find someone to ask. However, found them at Kroger. They were in the canned/jarred fruit area. Those little red buggers add a wonderful little taste explosion in your mouth. Next batch, each biscuit may contain TWO cherries! :) And to think, I almost made the recipe without them. Word of advice - DON'T!

Anyway, a definite keeper! Mine weren't so purdy to look at, but who the heck cares!

Why, thank you! But they sure tasted better than they looked...I'll be a little neater next time.

I set the remaining two down for George after he finished his dinner, and he commented he couldn't eat both of them. Yeah, right...plate was empty next time I checked!

I'm not sure I would have left any of them - they do look good - yummy.

Geez, Zeee, you might be on hiatus, but I see you're going strong with new recipes for us. Here goes all my good intentions.
