Hash Brown Pie
4 cups, shredded frozen hash browns, thawed and drained (pat dry)
4 tablespoons (1/2 stick) butter, melted
3 large eggs, beaten
1 cup half-and-half ( I've used the fat free kind too )
3/4 cup diced cooked ham (what ever kind of meat you like)
1/2 cup diced green onions
1 cup shredded Cheddar or Swiss or whatever kind of cheese you like
Salt and freshly ground black pepper
Preheat oven to 450 degrees F.
Gently press the drained hash browns between paper towels to dry them as best
as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into
the plate. Press them into the bottom and up the sides to form a crust.
Bake for 20 to 25 minutes until golden brown and starting to crisp.
Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the
hash brown crust is ready pour the egg mixture over it and return to the oven.
Lower the oven temperature to 350 degrees F and bake for about 30 minutes
until the quiche is light golden brown on top and puffed.
**** Just a little note on the Hash Brown Pies... I did place them under the broiler after I baked the crust
to give them a little more crunch then I put the filling in and put them back in the oven... lowered the temp
I've made this with Spinach, Mushrooms , Onions and Sausage
With Proschuto, Parm Cheese, Red Peppers, any combination you'd like
**** I have sauteed other veggies before adding to this ..ie, zucchini, onions,
yellow squash..also if I used sausage I browned first.. This can be made into
any kind of veggies you like....When using spinach I deforsted and drained and
squeezed dry..and I put in the pan with what other veggie and then mixed into the
eggs and cream.. I've also used egg beaters...it's a do able thingy....
