Attention getting title, Yes?
Tonight we used the Beth recommended ice cream machine for first time. We like it. Easy to use. Stores can in freezer easy and would hold a bag of some frozen food if I were in RV. Note to self, when done freezing, don't let it sit on counter til all have eaten, they were not kidding the remaining ice cream does stick to can. I got out with plastic scraper but it would have been easier while just made. We loved the texture. One qt canning jar of my chilled mix plus about 1/4 c almost over flowed can when freezing so will use slightly less next time. Took almost exactly 20 min as they said for firmish soft serve consistency.
Now to sweet potato and chocolate. Brenda (Berrywell) who signed on a while back only to get too busy to post (she will be back soon as she just sold her house and is moving into a 33 ft TT which she may or may not tow but hopes to get a B class soon too as she wants to stick around home while her daughter goes to college nearby. She has a lot of food and chemical sensitivities and makes all her own food. Growing much at times. She talked me into his.
Brenda's Sweet Potato Chocolate ice cream
1 large sweet potato, peeled, diced and cooked in water until very soft.
While hot, whirl in blender adding chocolate chips to taste and some cooking water to pourable consistency.
Cool in fridge then freeze in ice cream maker.
Because I used a powerful blender, it was very creamy texture. When chilled almost pudding like. Frozen it was very chocolatey and like soft serve. You have to get used to the mouth texture of NO fat or she said add some coconut oil while still hot and blend .
Husband a diabetic loved it. Only sugar from chocolate chips and carbs and fiber of sweet potato.
Very picky son had seconds!!!
I liked it but it took a few bites to be used to the non fat feel. Plenty chocolatey with about 1 1/2 c chips to the huge sweet potato. As I said the two ingredients made just over 4 cups mixture.
A success and now I have a fresh pineapple and canned coconut milk to try in ice cream maker.
I don't see myself making any of the book recipes ESP those that call for eggs and cream, but I do see lots of experiments here. The machine and the sweet potato ice cream were a hit. Brenda says try sweet potato with maple syrup sometime and I can see cinnamon in that one.
