Danish Aebelskivers

In honor of my great-grandmother, Caroline Jensen, I decided to make aebelskivers today. Why? Because I wanted to show her her descendants haven't forgotten. :) I got the pan at Cost Plus (swearing at myself for not accepting my great-grandmother's pan when offered to me many years ago by my mother). They're kind of like round pancakes and you can make them with filling. They freeze well for future use. I made them from scratch but I did notice Cost Plus sells a mix. I cut the original recipe in half. This should make about 25:

1 C flour
1/2 T sugar
1/2 t salt
1/2 t baking powder
1/2 t baking soda
1 C buttermilk
3 egg whites, beaten
1/4 C powdered sugar
Applesauce, jam, or other favorite filling, if desired

Mix all ingredients except egg whites and powdered sugar. Beat egg whites until they form stiff peaks. Fold in gently. Heat aebelskiver pan on medium until a drop of water bounces. Brush each cup with butter. Fill each cup almost to the top. Or fill bottom half with batter, add a dollop of jam or applesauce and then top with more batter for filled aebelskivers. Cook 1-1 1/2 minutes. As soon as they get bubbly around the edge, turn quickly. You can use a long knitting needle or chopstick to turn. I just used the point of a sharp knife to pierce the under side and then turned them. Continue cooking another minute or so until cooked through. Dust with powdered sugar. Also good with syrup.

Those sound delicious! And not a ton of sugar...

Just to clarify - first sentence said to mix ALL INGREDIENTS except egg whites.

Do NOT mix in the powdered sugar, right? That's just for powdering the finished product.
(got that, Vickie...? Or maybe I'm wrong? hahahaha)

I've seen those pans and wondered what they were for. The Dutch make something called Poffertjes that are very similar but are sold at stands outdoors.

Might try this when I am feeling more energetic.

When workkamping as host at a forest service campground some of our campers shared some with us so we had to get the pan...
they gave us the recipe but it seems different so will have to try this one...we have put sliced banana's in them as well as I've cooked
apples and seasoned them that was good but think the applesauce would be easier... :lol: oh as well as raspberries! they are really good!!

I've had them in Solvang here in Ca and Sheila made them for us at Q at one of the GTG's. They are definitely addicting. No Mitch, you can't have the pan, to many carbs for your diet!! :D

I too, saw them in Solvang, and also bought a pan to make them. However, I haven't made any yet. You can use pancake mix too.
