NutriBullet Salad Dressing

NutriBullet Salad Dressing

Postby MandysMom » Mon Oct 07, 2013 9:13 pm

I was listening to David Wolfe today, the nutritionist who makes many of the Nutribullet recipe/videos. Instead of looking up Nutribullet, I looked him up. I came across his Sulfur Beauty Salad. Sounds strange, but it simply means vegetables which are high in sulfur and good for skin. Here is the link to the video. Everything in the ingredient list looked good, well maybe except those strange tablets, which I am holding on.
Husband, who finished Radiation Treatment two weeks ago today, ate his first salad tonight, this one, and said it was good. A winner. You can use any small blender I think. I used 2 Campari Tomatoes and probably 1/4 of one of the long Cucumbers from Costco. Made enough for 2 generous dinner side salads, and filled a half pint jar full.

Here is a list of ingredients and the dressing he makes in Nutribullet.
Salad: greens (he uses arugula, water cress, kale-I used mixed baby greens); diced /cubed avocado; celery hearts ( I took a center piece and sliced it). He also sprinkles with tablets called Chlorella. I want to check those before I buy some and see how they taste, they are high Chlorophyll, and he said adds crunch and protein. I also added some diced bell pepper (red).
The dressing is
Cucumber
Tomato
rosemary (small pinch, I have fresh growing but dry would work)
green olives and some of their juice
thyme (dry pinch)
a garlic clove
pinch of arctic salt (I used pink Himalayan)
some evoo
a little spring water to get it to right consistency.
He said you can add some avocado to the dressing, but I did not. Maybe next time, but it would need to be used all that evening if I did.

Mix in NB and mine was creamy and tastes really good. Even Mel thought so. I was careful not to add too much rosemary and thyme. I only used maybe a quarter to half cup water, as the tomatoes and cucumbers are juicy. The NB really emulsified it into a creamy nice dressing.
It looks kind of the color of thousand island. I was surprised that Mel tried it and said, he could taste it a little and liked it. It is his first salad since radiation. I think he is excited.
Have a good evening.

When Brenda from NC pops in she has used just about every small blender out there. Maybe we can start a blender thread on gadget page.

I used fresh tomatoes, Camparis from Costco. But I think you could use canned, just reduce liquid added depending on how juicy the canned tomatoes are. We used the leftover dressing again for the second night salad and it had separated just a tiny bit but a shake or two and it was creamy again and tasted wonderful though the fresh garlic was a tiny bit more pronounced. I used a very large clove of garlic in it and might cut back just a bit next time. Of course since Halloween is coming you might like the garlic to ward off Vampires. LOL

Using canned tomatoes will add salt, which you may not want.

Looking forward to watching the video. I'm always looking for homemade dressings made with raw, or close to raw, ingredients.
As for the supplement, I'd hold off. There are so many touting their own products. If you are eating raw (especially organic) greens (dark ones) you are getting plenty of chlorophyll.
Thanks for sharing.

I make a salad dressing in the food processor with walnuts, pistachios, olive oil, white wine vinegar, honey, and any herbs you want to throw in. It's great on salads with apples or pears. Lots of good nutrients in the ground nuts.

We actually used the dressing two more days, after it was made. Not quite as creamy as first day, but still ok. I will be making it again. I also want to explore other dressings I can make in the blender/Nutribullet/or my Magic Bullet, which has smaller cup to mix in.
