Are cracklins the same as pork skins?

I had no idea what some of the items listed for sale at the link above was and when I read the descriptions well, ummm don't think I would want to try some of them :D But the cracklins must be terrific if the taste is based on sales!!

CRACKLINS - Cracklins are made from pork skin that consists of skin, fat, and meat. The pork skin is cut up into cube sized peices then dropped into hot hog lard (grease). Then cooked for about an hour. It is then cooled to room temperature and placed into a cooler. Once it is needed to sell, it is taken out of the cooler and placed back into the hog lard until ready to sell. When removed Best Stop Supermarket seasoning is sprinkled on top. We sell about 2500 pounds of cracklins a day... :!: :!:

Then again, a chubby diabetic addicted to "crunch" (in the food sense, not some new street drug sense), pork rinds are a good, and apparently ONLY, choice for nachos. I mean, come on - Celery Nachos? THAT doesn't work for me.

I'm too full of popcorn (air popped, no butter, no salt) to think about snacks. (yeah, I know; I hear you...that's not really popcorn).

Best Stop in Cankton has very good cracklins, boudin, etc. A very popular place to purchase cajun goodies.

Yep, The Best Stop is where my DH gets his cracklins. They use to be kind of a byproduct of the meat markets but they are big business now. And they don't give them away. The place is a few miles off I-10 and most of the time you will see people with ice chests stocking up on their products. I don't care for their boudin and the sausage is too hot for me. Down here most meat markets and country stores make their own boudin and sometimes sausage. Everyone will have their favorite. There is a web site that ranks boudin but I don't remember how they arrive at their rankings.

When I was a kid my grandparents had a little shed they called the smoke house. I never saw them smoke anything but it had a sand floor and it was always cool in there. When they made cracklins they would store them in the big stone crocks in the smoke house. We weren't suppose to be playing in there but we would pass by and get a handful of cracklins for a snack.

Martha and Vickie -

How about a vote for Don's boudin and cracklins? It is located on the frontage road at the Scott exit. That is always our first stop on the way in to visit family in Jennings. Two pounds of cracklins doesn't last very long though!

I know where Don's is but never have stopped there. My DH buys so much meat and sausage all over that I seldom buy any.
