Homemade Eggnog - UPDDATE

I finally experimented with my "healthier" version of eggnog. I liked it a lot - somewhat lacking the richness of the heavy cream, but very tasty and well worth the savings in all the "bad" things...

I used

1/2 C. Egg Beaters
1/4 C. Skim Milk
1/4 C. Fat Free Half & Half
3 T. (1.25 oz.) Rum
Some Splenda
Some Vanilla

Oh, I just realized that the original recipe made 12 oz. servings, mine, approximately 8 oz., so my numbers would be increased by 50% (i.e., cals = ~300).

Sounds great. I'll have to try it. Just curious. Why is there so much more sodium in yours?? None of the ingredients are high in sodium!!

I had the same thought, and had already gone back and checked the original containers...the online calculator was within just a few mg. of my adding the containers by hand.

EggBeaters = 270
FF 1/2 & 1/2 = 60
Skim MIlk = 30

thats awesome Mitch and of course the rum is necessary now imagine making ice cream with that, well, not the rum part cause it won't freeze
but maybe you could make some sort of rum topping for the ice cream when you make it. Maybe hot butter rum topping, wonder how thats made.
Ok, now I want some egg not ice cream and its too cold to go to the store.

Let's see - vanilla ice cream, egg nog and rum - blend - bet that would be even better than the ice cream (if I liked egg nog). Or use Mitch's recipe ... probably could leave out the milk, splenda and vanilla ... although good vanilla, maybe not. Would have to play with that - but the ice cream and the right flavors .... blend .. you get the idea. And for my blended drinks, I do good with the sugar free or fat free ice creams ... I've been really being good to myself, cuz I've been buying just vanilla ice cream and flavoring it myself lately with Torani sugar-free syrups ... then there are the nights that nothing works but my Bailey's mint ...
